Instant Pot "Sous Vide" Egg Bites

Creamy Egg Bites similar to the sous vide breakfast treats sold by Starbucks, but at a fraction of the cost. You can customize these any way you want. Just remember to give everything a good stir prior to steaming in the Instant Pot to make sure the add-ins don’t settle to the bottom of the pan and cause the egg bites to fall apart when removed from the pan. 

🍴For one tray, I use:

  • 4-5 large eggs, beaten with salt and pepper to taste (use wire whisk)
  • Splash of milk or half-and-half (some recipes call for 1/2 cup cottage cheese, but I haven’t tried that.
  • Diced, sautéed vegetables, such as onion, bell pepper, zucchini, mushrooms, spinach
  • About 1/2 cup (or more to taste) cheese (Swiss, gouda, cheddar–whatever you like).
Place 1 cup of water into the Instant Pot liner. Spray egg bite pan lightly with cooking spray. Pour egg mixture into egg bite pan, and set the pan on top of the trivet in the Instant Pot. Seal pot and set pressure to eight minutes. Allow 10 minutes natural pressure release, and then slowly release remaining pressure. 

To mold the egg bites, I use these silicone egg bite pans: sprayed very lightly with cooking spray, and they pop right out.

You can double the recipe and simply stack two pans on top of each other in the pot. The cooking time will remain the same. These can sometimes get very puffy, but they will still be fine stacked together.
